When I make this recipe, I feel like I am putting all of the best flavors of summer into one tart. Roasted garlic and tangy goat cheese complement sweet oven-roasted tomatoes. A good, healthy morning breakfast can make all the difference in your day, but sometimes you’re rushing out the door and you need something quick to grab. For me and my family, Morning Cookies are the answer, because what's more portable than a cookie? These are made from a nutritious (and delicious) mixture of bananas, honey, oats, whole wheat, nuts, and dried fruit — ingredients similar to a bowl of muesli, which I grew up eating on the commune in Vermont.

This classic Southern-style bread is sweet and full of flavor. The batter has bananas, carrots, and crushed pineapple and there’s a crunchy layer of walnuts and brown sugar running through the middle of each piece. I make this entire cake in one big bowl: All you have to do is make a well in the dry ingredients, mix the wet ingredients in the middle, and then combine everything. It’s so simple I actually just use a fork to do all the mixing.

This is a rustic and consistent pie dough recipe that happens to be a great fit for a galette. This recipe will make enough for two dough rounds, but we only need one for this recipe, so stash the other in the freezer for another time—or double the filling amounts to make two full galettes! The filling is variable; feel free to use whatever fruit you have on hand. Take the juiciness and sweetness of the fruit into consideration. The amount of cornstarch and sugar can be easily adjusted based on those two factors. You could also use this dough for savory applications— try a tasty pot pie or veggie galette!
